Description | Which animals in Ireland are suitable for processing through herd butchery? Omega-3 fatty acids, conjugated linoleic acid (CLA), and other healthy substances are typically found in greater concentrations in animals that are fed grass. Many people believe that meat from herd butchery is more nutrient-dense than meat from conventional butchery. By the end of 2025, it is hoped that the on-site facility will be fully operational. We value the idea of processing internally, even though we’re not quite there yet. Once certified, we will use a small-scale slaughtering unit (SSSU). On-farm storage is also necessary for a farm processor. We are starting to construct our processing facility on the farm. Other producers may use our facility, but this will rely on the SSSU and demand. What are you working on next? In order to complement the slaughterhouse, we will be constructing cold storage as well as a cooler for aging meat. I think the biggest thing is to be in communication with your rancher or butcher so you understand what you’re getting. Knowing your farmer and their practices has its advantages. I’m really passionate about having good relationships with them. Do you have any other comments about your farm or what you do? I think the most important thing is simply to connect with our ranchers so you know where your food comes from. It’s not just about taking resources out of the land; it’s about working with it. Additionally, the practice encourages sustainable land management. This fosters transparency and traceability. To maintain the health and productivity of pastures, farmers can use rotational grazing by overseeing entire herds. This direct connection cultivates trust and allows for personalized cuts and processing. I’ll say tongues, cheeks, heads, feet, or anything else you wouldn’t normally think to eat but that you can still enjoy. You can grind the cheeks into sausage or add them to stews. They make excellent soup stock. With those kinds of cuts, there are a ton of things to do, and I’m thrilled about it! What is your favorite unusual meat to use and how do you best prepare it? Tongue can be fried as a quick snack or made into tacos. A great bouillon is feet. Environmental considerations also factor into the growing popularity of herd butchery. The practice encourages local food systems, reduces transportation emissions, and promotes sustainable farming practices. Herd butchery is appealing because it can be traced back to the food source. You are aware of the animal’s upbringing, diet, and treatment during its lifetime. The source of your meat is known when you raise your own animal or buy a whole animal from a nearby farmer. |
